How About A Nice Tomato Break, Let’s Eat Some!

Tomato Asperagus Salad

Well by golly how about this salad? Huh? Ozzing with asparagus and fresh avocado and best of all Cherry, Grape, and Sungold tomatoes! And for good measure….there is some Gorgonzola Cheese….of course you can substitute any cheese that you really like or omit the cheese altogether! The same holds true for Asparagus, you can use Cucumbers to provide the Al Dente. My real point is the ingredients are up to you…..but I’d definitely keep the Tomatoes….☺
OK, here’s the real recipe…or should I say the “Original” recipe. Let’s take a look at how this beauty was built…..

 

Ingredients

  • 1 pound asparagus, trimmed and halved
  • 6 cups halved cherry, grape, and pear tomatoes in varied colors
  • 1/2 cup crumbled gorgonzola cheese
  • 1 ripe avocado, cut into cubes
  • 1 cup sliced basil leaves
  • 1/4 cup extra-virgin olive oil
  • 2 teaspoons lemon juice
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper

Preparation

1. Boil asparagus in a large pot of salted water for 2 minutes. Drain and rinse with cold water.
2. Mix asparagus with remaining ingredients in a large bowl, stirring well to coat evenly with dressing.

So there you have it, a great recipe using Tomatoes….BUT, not any Tomatoes, “CHERRY TYPE” Tomatoes. You are probably wondering why I chose a recipes with Cherry Tomatoes…right? Well I’m going to tell you why I chose them anyway! They are ready for picking a lot earlier than regular full sized tomatoes. Yes, I know, some of you may not have grown any Cherry Type Tomatoes this year……so you have 2 options, you can go to the store and buy some cherry tomatoes or you can cut out the recipe and save it for when you do grow some cherry tomatoes……that second option….maybe you should “Print” out the recipe and save it….cutting it out could cause problems with your computer system.
