Merry Christmas From Tomato 411

ornaments_and_bows_custom_13464Well here we are approaching Christmas….So let me wish you a Merry Christmas or if you’re following our Politically Correct cronies I’ll have to wish you Happy Holidays. ☺ One of my favorite things around the holidays, and especially Christmas is all the great food that is prepared and served to all the hungry mouths out there. So in that vein I’d like to offer a recipe that is especially tasty with just about anything….especially Christmas Turkey. I prefer the dish with my world famous Christmas Prime Rib, but no matter, it’s excellent with beast or fowl. So without further ado….let me introduce Sea Salt Steamed Green Beans With Roasted Tomatoes….voila….ChristmasTomatoesWithGreenBeansThe real beauty of this recipe is the wide variety of Tomatoes that this recipe accommodates from Romas to Beefsteaks, your choice. OK let’s get started. You can steam the green beans anyway you prefer but my favorite method is the covered pan with water method….Bring a scant 1/2 inch sea salted water to boil in a large frying pan or saute pan. Add green beans, cover, and cook until green beans are tender to the bite and water has evaporated, 3 to 5 minutes….(I use a level teaspoon of sea salt for the water). But I’m getting ahead of the sequence here…FIRST we have to prepare the tomatoes, so let’s get all our ingredients together…..

4 cups tomatoes, cut into 1-inch pieces…..Typically I use Romas but this is your choice

1 whole head garlic, cloves separated and peeled

2 teaspoons Sea Salt

1 teaspoon freshly ground black pepper

1/4 cup extra-virgin olive oil

1 1/2 pounds fresh green beans, trimmed

Now we can assemble this masterpiece

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Mix tomatoes, garlic cloves, salt, pepper, and olive oil in a large bowl; spread into a 9×13-inch baking dish.
  3. Roast tomatoes in the preheated oven until they are lightly flecked with brown spots and the garlic cloves are tender, about 45 minutes; (remove from oven after 20 minutes and mash lightly with a spatula).
  4. About 5 minutes before tomatoes are done, you can do the green beans as outlined above…..then set everything aside until your Roast or Turkey or Ham are ready and nuke those Tomatoes and Green Beans for about 45 seconds and you’ll be good to go.
