Football Is Here And So Is Tomato Salsa!

Salsa411Well it’s that time of year again, FOOTBALL Season! That time of year some women hate and others embrace. The one’s that embrace it have come to the realization that the old hack of “If you can’t beat them, join them” is better than a life of the dreaded “Football Widow”!

So in honor of this momentous time of year I’m including a recipe that will have everyone tasting it damned near as happy with the snack as the game…almost! I call it…Chunky Tomato Salsa! How’s that for a catchy recipe title huh? Me too, I thought it was reflective of a superior intellect You’ve all come to expect from your humble Webmaster. So…let’s get to the recipe for this mouthwatering gem…

TOTAL TIME: Prep: 45 min. Cook: 1-1/4 hours + chilling….. and will serve 16…..more like 8…☺

  1. 3-1/2 cups peeled chopped tomatoes (about 4 large
  2. 1 large green pepper, chopped
  3. 1 medium onion, chopped
  4. 1 serrano pepper, seeded and chopped
  5. 1 jalapeno pepper, seeded and chopped
  6. 1 tablespoon sugar
  7. 2-1/4 teaspoons salt
  8. 1 garlic clove, minced
  9. 3/4 teaspoon ground cumin
    1 can (6 ounces) tomato paste
    1/4 cup white vinegar
    2 tablespoons lemon juice
    Baked tortilla chip scoops

In a large saucepan, combine the first nine ingredients. Stir in the tomato paste, vinegar and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring frequently. Cool to room temperature. Cover and refrigerate until chilled. Serve with chips. Yield: 4 cups.

Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

Enjoy this recipe with a sweet red wine if You don’t like the normal keg of beer.
